How we talk with other people is governed by complex social rules that nobody ever really explains to you. You're supposed to just pick it up somehow as you grow up. The kinds of conversation you experience as you're growing up, combined with your own personality, go together to make up what you think of as 'normal conversation'. It can be a shock to meet other people who have a totally different idea of what is acceptable.
Is it always rude to interrupt?
In fact, it is all a matter of convention. There is no absolute 'right' way to talk to other people. Experience shows that reasonable 'turn taking' and staying more or less on topic, overall, leads to more enjoyable conversations for all participants, but there simply is no hard and fast rule that is guaranteed to work in all situations. You always have to 'play it by ear', depending on who you are with.
However, if your ear has picked up that people you regularly interact with think that you interrupt (or change the subject) so often that it is annoying, you might want to do something about that so that you don't risk damaging relationships or upsetting people. It can feel rather difficult to change a long-established way of communicating - because it just doesn't feel natural to you to do it any other way.
