How we talk with other people is governed by complex social rules that nobody ever really explains to you. You're supposed to just pick it up somehow as you grow up. Is it always rude to interrupt?

You always have to 'play it by ear', depending on who you are with.
However, if your ear has picked up that people you regularly interact with think that you interrupt (or change the subject) so often that it is annoying, you might want to do something about that so that you don't risk damaging relationships or upsetting people.
